wow...  picked up a nice touch of smoke (1 chunk each apple and cherry). Rubbed with grainy mustard and then brown sugar. Glazed with bourbon (reduced by 1/2), heavy grain mustard, honey, brown sugar, and a splash of apple cider vinegar. Tried @ScottyTooHotty toys, great flavor but didn't hold their shape. Bacon, blue cheese, and scallions.
