Beef Dino ribs internal temp? When are they ready

Been smoking a rack of these at 210-215 degrees. What temp should they be done?  Thanks!!!

    It gonna be around 200-210 but don't go by temp.  You want to be able to probe them with no resistance.  Kinda like a toothpick in warm butter.

    Trust @Mattman3969 - temp is only a guide.  It is all about the feel-and the feel is the tooth-pick test and it is fail-proof.  Beat their pork cousins every time.  Enjoy the great eats that await.

    Thanks for the help,5.25 hours at 215 degreeshours and they passed the toothpick test,friggin awesome put them on a rib rack indirect and never even looked at them until 5 hours into it.im tempted to try that method using HDF but so far my stuff is always juicy
