Pork Carnitas

Hey everyone - wife wants me to smoke up some carnitas for a party we are hosting later this month. I'm new to BGE and don't have a great recipe - I've found a few on here and other places but not sure what the best route to go is. We are also making some chicken tacos so thw carnitas will be extra so I'm not overly concerned with the amount of carnitas I make. What is the best recipe out there??

Thanks in advance!

The best way I've done them is following this recipe
http://www.seriouseats.com/2010/07/the-food-lab-how-to-make-crisp-and-juicy-carnitas-without-a-bucket-of-lard.html in the DO on the egg.

An easier and more "eggy" way, although about as far from authentic as is possible that has worked fine for me, and I cooked up for a local eggfest was to do a pork shoulder, rub it with some classic mexican spices (and if you really go all out, marinade it in garlic, and orange juice 24 hours first).  I forget which rub I did last time but I think it was Dia de La Fajita with some extra cumin and a heap or oregano.  Once it's pulled, I fried it up in a bit of lard in the cast Iron on egg.

Top it with some red onions pickled over night with a heap of salt, some sugar and a bit of white vinegar.  Boom.  Carnitas as authentic as a 3 dollar bill, but tasty as all getout.
