Thanks Everyone, the burgers are 1/2 lb. Sages Meats in Oswego, IL is our local butcher. Tom prepares a variety of burgers but the Gourmet Burgers are our favorite. He does add a little bit of seasoning to the meat.
The DP Mole paired nicely.

Have yet to try my mole sample. With smashburgers on the menu for Thursday maybe I will. Any recommendation on its use on burgers? Light, heavy, initial or near end of cook? Honestly I have never had mole in my life!Re-gasketing the USA one yard at a time
