Some bacon-wrapped goodness. Oh my this is good.

I have heard it called a bacon bomb or bacon explosion and either way, this is good. Made a bacon weave then rolled out some ground chuck, added a mixture of cream cheese, onions, bell peppers and crushed red peppers, then rolled that up rolled it in the bacon weave, then dusted with some simple rub. Indirect at 350 to internal temp of 155. Put some Sweet Baby Ray's on half of it. Served with a salad and some naan.

Put a sausage with it as it was getting near the use by date.

Sausage finished early then it was sit back and wait for the goodness.

Also did some spring cleaning, doing a number on the grate and I changed out the gasket as well. Check out that gasket...won't look like that long.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

My wife just suggested stuffing it with carmalized onions, jalapeño and hash browns...I like the sound of that. Her other suggestion...Mac and cheese. Not sure what I think of that.
