DST Confusion

Last Sunday I smoked a slab of spare ribs that I had defrosted two days prior,
Rubbed the ribs with mustard and applied Meat Church Gospel.
At the 5 hour mark I brushed on the sauce and pulled at 5:30 hours.

As I was carving the ribs I realized that they were Baby Backs not Spares!

I believe the 1 hour time difference put me in confused state.
