Posole for two

We had two egged chicken thighs left over from last nights meal.  Didn't want just chicken soup, so we upped the anti and made posole. 
three dried chilis; Guajillo, Ancho and pasilla.  Cleaned, nuked and steeped for 15 minutes. The other ingredients:



Chicken went into hot oil while the other ingredients were put in a blender, blitzed and add to the hot oil to fry.  



After 15 minutes of cooking the sauce turned the brown color.  Seasoned with S&P bay leaf, coriander seeds, celery seed. Todd's Dirt, Ancho and Morita sauce and raw honey.  Simmered  for 1.5 hours drained possible added and cooked another 30 minutes.
Final product



I prefer red posole made with pork, but this wasn't bad at all and will be made again.
