What is a "Nose Off Brisket R/W" and How do I smoke it?

Picked up this today at RD and not sure what it is or how to cook it. Looking for suggestions.

    That is a brisket flat.

    I don't have much experience cooking flats only.  Some here will chime in soon.

    Regarding flats (which is what you have as noted above), you can cook just like a packer at around 250-270*F indirect til it probes like buttah-the true definition of the finish-line.  This finish-line window is quite tight as the hunk is fairly lean.  When they were all I could get I would notch the end across the grain (defines slicing direction once you create the meteorite), trim to about 1/4" of fat and run fat side down.  Figure on around 1.25 hrsd/lb but the cow drives the cook.  I initially foil protect the thin section to help keep it from drying out.

  • So its just another confusing name for the flat. I suppose the "nose" would be the point?

    My wife picked it out while I was looking for baby backs.

    Consider using it to make corned beef.  Best use of flat in my book.

    I've had better results using a water pan with flats only. But then I've had only decent results too. Sandwiches and chili.
