Short Ribs?

A local family farm just started up their own butcher shop down the road so now I have access to all kinds of cuts that have been lacking in this area.  First up beef ribs.  

Would these by short ribs or might they go by another name?    Whatever they're called, they were awesome!

    yup, looks like short ribs to me. Looks great!

    Yep, those definitely look like short ribs to me. I believe those are called English Cut short ribs.  They cut them into individual ribs, and then they cut each rib into 2-3 inch sections across the bone.  Basically the same thing as these- just smaller pieces. 




    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.
