Beef Chuck Ribs

Lots if discussion lately about Costco expanding the meat offerings.  Picked these Prime Chuck Ribs up in Omaha a few weeks back and just getting around to cooking them. Total weight was 10.8 pounds split into 2 sections.  Rubbed up with my brisket rub and let it sit overnight in the fridge.  Got the egg going 275 indirect with pecan wood the next day and ribs were on around 10am. Egg held steady like normal and pulled them off around 530 probing like butter and around 205 meat temp. These are really rich tasting and very very fatty. I even had an entire rib of nothing but buttery soft fat.  Definitely be looking for these babies again in the near future.
