Last minute audible: Dry aged steaks to sausages, but it is okay!

This morning I opened this bottle about 9 am as it is one of our favorites:
Because last night I pulled these 56 day dry aged steaks out of the freezer and they would have went well together:
So all day I was looking forward to the steaks as I worked outside and smelled the pork butts going low and slow that I cooked for my team. (No pics, but here is the drip pan to prove it happened):
Just as I poured my first glass from the decanter getting ready to start the reverse sear cook, my wife got a call from our son that grandbaby #3 was going to make his debut. So she is headed there now as she was invited to be in the room when he is delivered if all goes as planned.
So no steaks or wife will be present for dinner.
Quickly pulled out some sausages and am defrosting them in warmish water although I have nothing else to go with them. No roll, onions or peppers..... anything; and I will save the planned sides for tomorrow's dinner:
As I wait for them to totally thaw (almost there), I am enjoying a great glass of wine from an appropriate glass with some Pink Floyd, Disturbed, and Five finger Death Punch playing pretty loud on the stereo:
The egg is ready to do its thing as soon as they thaw....

Congrats brother!! Another day or two on that beef won't matter as you know. Trim some of the thick fat prior to cooking. Hope all are healthy and well.Sandy Springs & Dawsonville Ga

I have never trimmed the fat before other than the "tip" on ribeyes, which you will notice is gone on these. While I agree it is a bit thick on these two, I was not planning on doing any trimming. Think I should/need to? Interesting thought....--------------------------------------------------

The raw steaks look amazing...but sausage is always delicious.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Things settled down and cooked them as planned last night on the MM. Reverse sear method:
And with that picture, my phone filled up. I was not about to go download to get the money shot. It is just as well. Truth being told, I went a couple of degrees over target and it was medium. Oh well, I still suffered through it.
The reason the phone filled up, was because of other recent taken pictures, mostly of this little guy:
