Pork Belly = Meat Candy
I was at Costco over the lunch hour today and found they had small (4#) packs of sliced/skinned pork belly. It's cut like bacon, but about 1/2" thick. Time to make some meat candy. I saw a recipe some time ago where they dusted the slices well with BBQ rub and brown sugar and then slow smoked them for several hours to render off the fat. The result was some kind of yummy. I'll post pics once I get things started tomorrow. I'm open to suggestions from those who've done this in the past.

I did an overnight cure with sugar, salt, and seasonings. After rinsing to desalinate I tossed in brown sugar and BBQ rub. Here we are after 3 1/2 hours at about 200.
One was sacrificed to the Quality Assurance process. They'll be going in pork belly tacos later today.

After five hours I made a test taco. It was a simple combination of a thin sliced belly piece and a dollop of fresh made slaw on a corn tortilla. Wow. Off the Egg they come.Michiana, South of the border.
