Lamb Shank / Forequarter

Not sure what this cut is called, it's the shank with the rest of the lamb near the shank.  Getting braised in the egg with veggies and chilli.

    Topped up the gravy once. Smells good! Chucked some rosemary twigs on the fire as well as some on top.

    Verdict.

    Veg very good, reduced down and concentrated flavour. Put them in a bowl with some kitchen paper to take up the excess fat.

    Meat on top more like roast lamb, tasty. Meat underneath where more braised was very soft, like pulled lamb. Very rich taste.

    Next time I'm going to get the shank with bone in and the rest of the joint cubed up and make a hot curry with it.
