Adjustable Rib Spare Ribs and ABTs Fully loaded

My first big cook on the Adjustable Rig.
2 of the slabs will be Chinatown style the other 3 with Bone Suckin Sauce.
ABTs stuffed with onion chive cream cheese, shredded taco cheese and diced Chorizo sausage.
Cherry Wood and Apple Wood for smoke.

Halfway through the cook I realized that I forgot to replace the 17.5 inch stone on the Woo so I just had the stainless drip pan below the ribs. Oh well, they still came out good. -
Looks like everything turned out great.

Should I have trimmed the ribs off a bit first to make the slabs shorter? -
dstearn said:Thanks, The only issue I had was positioning the ribs on the top rack so that they did not get caught on the dome when opening and closing. The adj rig was set on the Woo.

If I set the Woo in the notches will the 17.5 stone be too low?
