Prime Rib Roast

Cooked a 5.5lb prime rib roast tonight. 225 indirect, with just a small handful of oak chips. Was excellent, definitely one of the favorite cooks off the egg. Took about 3 hours, had the veggies/potatoes in the tray below. We will be cooking this again very soon!

Okay, so it took me longer than 2 weeks to cook the prime rib. Used the overtime to pay for it, damn expensive.
My wife seasoned it up with BGE seasoning and put it in the fridge yesterday. Then took it out late this morning to let it get to room temp.
Put it on 260-275 for about 3.5 hours , removed from egg with IT OF 135-140.
the last 30 mins I put my mushrooms and onions in bouillon with fresh garlic on the grill beside the meat , so they finished at the same time.

Rubbed mine with crushed pepper and kosher salt. Cooked to 115 degrees and rest for 30 minutes
