Plate short ribs from Sams club

Sam's Club always has cross cut short ribs so I asked if they had a whole slabs. They do have them and a cryo-pack with two slabs is just under five dollars a pound. Three bone so I think that means they are plate short ribs. Here is one slab in progress...

Those look mighty fine.

I am thinking of trying something a little different with the other slab in the freezer. I might cook until they let go of the bones completely and then cube them up for burnt ends.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
