Beef chuck cross rib steak

Wife brought these home. They are 1/2-3/4" thick. Don't appear to be marbling much. Question is....600° minimax and holy cow couple min each side and call em good?

    Pretty much yes. Assuming you're shooting for med rare. I'd still at minimum finger test for desired doneness. Or Thermapen or ThermoPop. But, you should be real close.
