Rib Set Up

I'd love to know everyone's thoughts on this rib set up. Doing side ribs for my 40th coming up Saturday. Have to fit 8 long racks. You guys see any problems with this. I've done 4 racks lots but never an elevated level of cooking. It will be a 3-2-1 method at 250 grid temp. Should I set the grid thermometer on the top or bottom? Also I'll be using a drip tray. Yes, those are the charcoal baskets from a kettle. Thanks.

Welcome! I concur with @bhedges1987. Beware your dome thermo coming into contact with your ribs. Grid thermo on the grid over a Pas leg. Looks kinda tight to me.

Maybe it's the pic, but it looks like your ribs will be sitting pretty high.....will they fit in the dome?

I can't see the ribs fitting under the dome. Just my take for 8 racks - it looks like you can get 5 on the Egg at a shot. Either cook 5 on the Egg and 3 on your kettle, or cook them in rotation on the Egg.

From the picture it doesn't look like you have an AR?
If you did you could probably do 6-9 racks, if you had a spider and a small ceramic stone:

Or... without a spider but with an AR, you could do 2 levels of ribs each holding 3 medium sized racks (6 racks) on the BGE.

FWIW, I find regular length pork rib racks extend well past the platesetter shadow. Thus you need foil protection, depending on your heat-deflector.
Can you use your four rack set up and place the other four on top and rotate throughout the cook??

It's happening. Barely fit 9 racks on both cookers. Need a new grid system for the egg.

BTW- going forward, just use the toothpick test for the finish-line. Insert into the rib meat; no resistance and you are there. Enjoy the party and the celebration.

Three levels on Large with cgs adj rig, extender, round grid up top and two oval grids with slide guides and crossbars, spider and stone....
