30 lbs of pepperoni sticks.

Second run doing this volume as the last 30lbs didn't last the weekend.Sold out that quick.
This is one is just a spicy pepperoni. I don't like a mild pepperoni, to me it needs some zing to it.
Mpi meant to take pics as I was making but I get to involved and or excited. All I have is the work set up prior to mixing and stuffing and the load in this morning. It smells so good out of the fridge and I can hardly wait to smell the kitchen in a few hours.

They are coming to temp faster than previously. Just had to rotate and move a couple to another rack as they were a bit too close and not circulating well.
