Rib roast ribs ?

i had a 2 bone rib roast in the freezer that was starting to look a litttle icy. So I took it out and pulled it apart . Took of the cap for some nice steaks. Shaved the center fit Super Bowl cheesesteaks and left plenty of meat on the ribs. My question is shoul I low and slow the ribs like short ribs or just to medium like the roast ?
