Saw this online yesterday and it seems fairly brilliant. Looks like a good alternative to beer can chicken or spatch, especially with the veggies too. Now, how to get my wife to let me use the bundt pan?

I started using a pineapple when cooking chicken. Leave the base and the core together and slide the chicken down on it. Best chicken I have had.

I saw one of these thick, heavy bundt pans at a yard sale last year. Looked at, played with the idea of getting it, then put it down. For $1 I should have grabbed it, but no. Guess I did not have the imagination necessary to come up with a way to justify getting another one.
