It is the cap of a ribeye and apparently delicious, I only just heard of them.

Yes, and it is delicious. Kinda hard to find, though. If you can find a whole one, cook it hot and fast. It's a pretty thin cut of meat so it doesn't need much time on the egg.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

They are awesome! I never seen them in Canada, I have to cross the border and buy them at Costco. I have bought them from Costco. Excellent piece of beef. I will say that I don't like to cook them in the rolled pinwheel that Costco sells.
Rolled up, they don't have a good crust to interior ratio. When I cut them after cooking they begin to unroll. This leaves a poor crust to interior ratio.
I think a unrolled intact cap would cook much better.
This is only one guy's opinion of course. -
Just buy a prime rib and break it down. Easy and more cost effective.
you will get your cap steaks, Dino bones, and a bunch of ribeye steaks. Win win. -
