Picked this up from RD today. Little ad under it says its good for steak sammies, carna asada, etc.
Never heard of this cut, but since it was under $4/lb and already sliced figured I would try it.
Anyone have experience with beef knuckle? Or know where the cut is from?

Ok, so probably pretty lean. Plan is to use it for philly cheese steak and carna asada. Will plan to marinade then and probably use some apple cider vinegar or lime juice to break it down a bit.FATC1TY said:Jokes aside-

@CTMike the thing is most people don't care for the moose knuckle's exotic flavor. And sometimes it can be a little tough. It's really all in how you prep it.

You really have to work it and get it nice and wet. They can be salty and have an exotic flavor sometimes, each one is different, really. It's not for everyone, obviously, but when you find something that works, keep it up, but don't fall into a routine and do the same thing every time.
