Double cut pork chops, Tsunami Spin and Vacqueyras ... a winning combination

Last night we introduced yet another friend to the Big Green Egg. This is partly because myself and SWMBO enjoy utilising the BGE but mostly it's in an effort to socialise the product so that there is a critical mass warranting a UK Eggfest. :)

We showcased the MM with some double cut pork chops rubbed with Dizzy Pig Tsunami Spin (@TheToast another one available in the UK) , cooked low-n-slow at 275F until internal temp was 140F. Pulled and double wrapped in kitchen foil, heated the Egg up to 550F, seared for two minutes each side on the CI grid. Served with smokey bourbon baked beans (a speciality of SWMBO) and triple cooked chips.

As a wine match, I went with a Vacqueyras, a Grenache/Syrah blend. This was a perfect partner to the rubbed pork, it's up there with some of my favourite wine/food pairings.

Our dinner guest was blown away by the pork. She commented it was moist and cooked evenly throughout. Time will tell whether she'll pull the trigger on getting her own.

    It really was. If you're doing pork and tsunami spin, and want to try a wine, the Vacqueyeas is a winner. On the other side of the pond, a Qupe Syrah or mature Frogs Leap Zinfandel would work just as well.

  • I will keep those wine pairings in mind.  Zinfindel and syrah are some if my favorites.
