Fantastic Dessert - Lemon Meringue Cheesecake

Made this last night (in the oven) for a family birthday and was really knocked out by the results. Odd thing is, I've never been a big fan of citrus flavours in dessert, but this was just phenomenal. While cheesecakes can often be overly-rich and heavy, this one was light and fluffy. Everyone had a second piece and the cake disappeared!

Just thought I'd share in case anyone else wanted to give it a try. 

Ricardo is a minor celebrity here in Canada. He has a tv show and magazine. His website features a wealth of simple and delicious recipes that are worth checking out. Just last week I made a "carbonade flamande" (a Flemish stew of beef and onions) that was equally impressive.
