Reverse Sear Tri-Tip with New Flame Boss 200 and Grill Grates
Well, my wife washed the receiver of my Maverick 733 last week. Dried it out for several days in a bag of rice. It still works but the grate temp doesn't show on the receiver. She felt really bad and let me buy the FB 200. I found a place locally that gave me a great price. Since I was there, I got the grill grates and some rubs as well. Perfect time to cook the tri-tip. Going with a salt, pepper, garlic rub to about 115-118, then reverse sear with the grill grates.

Flame Boss worked ok for such a short cook. The grill grates are pretty amazing. Gets hot quick and does a nice HOT sear. It was a little more rare than I like. I should give it another 3-5 degrees before I pull to sear next time.San Diego, Ca.
