Going for a low and slow tonight or tomorrow morning, what do you recommend for temperature?  Going to mustard, then rub.

Butts are pretty forgiving and there's lots of ways to cook them.

I like to cook mine at 275 to an IT of 195-200...and make sure the bone wiggles. I like to FTC it for an hour or so before I pull it apart.

The Egg does a marvelous job with butts.

You have many options as noted above.  The key is when do you want it ready to consume, then work back from there.  With around 260-280*F you can generally work with around 1.2 hrs/lb but the pig drives the cook.  You can dial it down for longer duration or dial it up into the low 300's*F and be done in around 5 hours or so.  Search turbo butts.
Finish-line indicator is when the bone pulls clean generally at the temps noted above or into the low 200's.
    Above all, have fun.
