Stuffed pork loin

i butterflied and used some homemade pesto, marinated dried tomatoes and feta. Rubbed on some Mediterranean ish. On the egg indirect at 350. I'm hoping for a tasty finish.

    Looks great!  I get a lot of compliments on the ones I do at Thanksgiving.  I'm interested in how soft the dried tomatoes end up.  Not too chewy, I hope!

  • It turned out delicious! The tomatoes soaked up all the oily goodness from the pesto and were tender. This one we will do again. Sorry for the delay, it was early to bed last night.
