HAPPY NEW YEAR TO ALL!
Kathy found a recipe for a lobster pizza that she wanted to have tonight so who am I to argue...actually pretty basic pizza...here are the ingredients...tomatoes, mozzarella cheese, fontina cheese, meat from 4 small lobster tails, my BBQ sauce, Asiago cheese & bacon (excuse the cluttered counter)...
For the dough I used what came with the recipe...half of the mixed cheeses on the dough, some of my BBA sauce (this wasn't in the recipe, but I wanted it) & then the lobster meat...
Then the bacon pieces & tomato on her half...
Top with the rest of the cheese...as I said pretty simple...
On the top level of the adjustable rig with pizza stone below for indirect & dome temp at 450...
25 minutes later off it came...
And the bottom of the crust was perfect...
FANTASTIC way to ring in the New Year!!!

Morning All:
Thanks for the comments! The only change I might make would be to cut back a little on the cheese (use 6 ounces each of the Mozzarella & Fontina instead of 8 ounces each)...probably a little bit more BBQ sauce too for a bit extra zing! Definitely a do-over!Have a GREAT day!
