working on my pork ribs

Since I had the day off work, I decided to cook up some ribs.  I have been changing things a little bit on every cook just to see if there are any improvements.  This round of ribs were intended to be done with the 3-2-1 method.  I had to change things around a little because the ribs were just cooking way to fast.  I ended up doing 3-1-.5 at 230F dome temp, during the foil wrapping it did not feel like they could handle 2 hours wrapped up.  Anyway, the ribs turned out excellent.

Used Dizzy Dust as the rub, honey and apple juice in the wrap, and a very light coat of honey BBQ sauce just to finish it off and caramelize them during the unfoiled final portion. Also had apple wood in at the beginning to start the smoking.





They even had a nice little smoke ring going.
