Pork Loin options

Costco had pork loins on sale.
Roasted half with "Simply Marvelous Cherry Rub" and a couple chunks of cherry wood, pulled at 137, coasted to 150, about 5 degrees higher than I normally shoot for.
Put the other half into a cure to make Canadian Bacon (Morton's Tenderquick and sugar, from the Morton's website)
Both quick weeknight preps.
Thanks for looking

Oh I grabbed a couple of these when they had their sale. I'll have to try the Canadian bacon idea. I made a Honey Bourbon/ huckleberry sauce that is good on a strait loin roast also

Looks great!“There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body.”
