Costco boneless short rib question?

I have been looking at these and wondered what would be best? They look too much like steak for low and slow or a longer sous vide bath? I would like to sous vide and then sear but I'm wondering what others have done?

I did my boneless short ribs 24 sous vide at around 185 if I recall...they turned out wonderful.

I just did those and cooked them like mini brisket's. they turned out pretty good, but are something I definitely would want to experiment with!Just bought an Egg? Here is what you get to look forward to now:
