Chili

My lovely wife decided she wanted chili today, so I did what everyone else is doing. I put 4 cans of Rotel and 4 cans stewed tomatoes, a large chopped white onion, 2 large cans of red kidney beans, and two large cans of black beans into my enameled cast iron pot. Added in the spices from 2 boxes of Carroll Shelby's chili mix because it's what I had on hand. 

I then fashioned a loaf using two lbs of ground chuck and one lb of ground sirloin. Mixed in another white onion and some leftover rub I made using @Eggcelsior's Baltimore Pit Beef rub recipe. 

Put everything on the XL at 350 with some Hickory chunks for smoke. Let it ride for 4 hours, pulled and chopped the beef, mixed it in and had a bowl with sour cream and shredded cheddar and colby. It was amazing. 

I know you Texas purists will say beans have no place in a bowl of red, but I like beans in my chili.
