Two 5 bones prime ribs going on an XL tomorrow, guide on time?
last year my husband was way off on his estimate and we ate way too late. Thoughts on how long for reverse sear method for this much meat?

Same as one roast of the same size
i don't reverse sear so I can't guesstimate time. But it won't rake longer to rapst than doing a single roast -
Temp probe them of course. 2, maybe 3 hours max at 250 assuming your goal is MR. No reverse sear needed unless you prefer M-MW. If you run hotter, shorter cook. There have been a number of posts of reverse seared roasts that are, for me, overcooked. Bring it to RT for 1-2 hours prior to cooking. Then roast the roast, no reverse sear needed but to each his own. I'd pull it at 125. That'll give you nice MR in the middle and some M on the ends after the rest. Well I misread as 2 5lb roasts, apologies. That is trustworthy advice. Without re-reading it you'll need 4-5 hours. IT is what matters per your tastes.Sandy Springs & Dawsonville Ga
