Boneless pork rib roast for pulled pork

Hi again!
I picked up a boneless rib roast for Christmas Eve dinner tomorrow. Never done one before! It's about 3-3.5lbs. I'd like to do it low/slow for sandwiches. 
I'd love some advice!

  • You can technically do it, but not thw ideal cut for pulled pork

    you have pork chops that haven't been chopped

    works very good as a roast. Not enough fat and connective tissue to re-wet the meat if you cook it like pulled pork until it falls apart

    it'll fall apart, but it be dry and stringey

    can still go slow, 225-250, just yank it off at 135-140 or so. Dry it overnight at least and it'll be even better

    Ah man!
    I didn't think that's what I wanted, but the butcher said it was!
    Thanks for your advice, it needs to be on early in the AM. Otherwise, i would go get something else.
    I could always just cut that up for pork chops, like you say.

    You want to get a boston butt aka pork shoulder.  Or a picnic.
