Cornish Game Hens

I've got this cripsy skin thing figured out - get bird up into the dome on a raised rack. That's it. No need to let it sit in the fridge for an hour. Just get it high.
Cooked two cornish hens last night and tried some Dizzy Pig rubs. Pineapple Head on one and Raging River on the other. I liked them both, but pineapple head was my favorite, but could have used a lot more of it on there! Cooked them at 350*F, raised and indirect, for a little over an hour, with a little cherry and apple wood for smoke. Very, very good!

Paired the birds with steamed broccoli and a sweet potato with some butter and cinnamon. Sunday dinners are the best!

I have ate a few in the fridge ready to go. I toss 3 or 4 in every time before I fry a turkey to give us something to snack on while we wait for the big bird. Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

My first cook on my Egg was hens. I stuffed them with chicken and garlic rice/bacon. I used pecan for smoke, and did them indirect at 300. They were delicious.
I'm in Fredericksburg, VA, and I have an XL and a medium. -
