Specifically to keep meat and not get freezer burnt. Mine is at zero, wondering if I should change it. Thanks for any info!

freezer burn is caused by leaving it in too long and not "insulating" it enough (proper wrap).
"It is generally caused by food not being securely wrapped in air-tight packaging. Freezer burn appears as grayish-brown leathery spots on frozen food, and occurs when air reaches the food's surface and dries the product." Properly wrapped, it can be frozen for more than a year. -
Yep, air is bad. Suck it out or submerge in liquid. Freezer burn is dehydration and oxidation. It doesn't have anything to do with your freezer temperature (humidity can change with temp and it's def a factor).

My freezers all run @ 0 degrees F. Making sure to eliminate as much air as possible, I wrap with stretch-tite, then label using a Sharpie. Lastly, I wrap once more with freeze-tight. The wraps adhere to themselves, so there's no need for tape. Never have a problem with freezer burn, even over an extended period of time (1-2 years).

I vacuum pack every thing using Vacmaster Pro 350 and Vacmaster chamber sealer VP120 .Freezer is at an average of -7 F and get no freezer burn . Some stuff in there going on 2 years and still tastes good . Vacnasters get used an average of 4-5 times a day between fresh roasting coffee storage and food . Properly vacuum packed food lasts a hell of a long time regardless of what temp it is stored at .

I keep my freezer several degrees higher than many parts of the country today

The colder the better for food preservation. I would bottom out the thermostat as low as it will go.
Ice cream needs to be kept at -10 F to stay stable, most home freezers can't go the low. Of course if you are not storing it for months you can set the freezer at 0 F and it it will keep fine. -
I keep the freezer at 0 and I vac seal anything that is not being cooked within a week, maybe two. Ice Cream has never had a problem in my freezer even over long periods.
