Preference for Hot Sauces?

If I am soaking pork chops or chicken I go with a low level sauce like Tabasco along with my normal spices,( garlic,onion, salt , and pepper.
For tuna or salmon I use Matouk's , it's a West Indian pepper sauce with papaya , mango , and scotch bonnet. I also use this diluted as a sweet and spicy wing sauce. When I lived in Pa i had to have my son send it to me, but now that I am back in Fl I can get it on the shelf at some Publix stores.
I don't use any sauces in my chili, just fresh Tabasco peppers , Cheyenne pepper, and chopped chili peppers.
I like sauces that have good flavor and don't leave you scrapping your tongue on the driveway to stop the burn.

    I'm a masochist, so I love melting my face off. That said, Yellowbird Habanero is wonderful. It has fantastic flavor and a good kick. I put Texas Pete on BBQ, probably because I'm a Carolina boy. Tangy bite from North Cakalacky.

    Now I also consider myself a hot sauce guy, but I like it pretty hot. @Eggcelsior suggestion of Yellowbird is good, but its not hot enough for me. I like Melinda's naga jolokia hot sauce. I actually got this recommended to me by a user on this forum. Cant remember who but I thank them. I usually do one drop per a bite.  Here is a link

  • I used to like the colon cleaning sauces, but found out as I got older that there are a lot of foods that I have no idea what they actually taste like. 
    A friend of my nephew was at our house and said he can handle any hot sauce I had. I opened a jar for him to try one and my beautiful wife hands him a spoon. He took half a teaspoon and put it in his mouth before I could stop him. It was fresh ground habenaro with some yellow mustard mixed in. Poor kids mouth and tongue blistered and he had problems breathing for a while.
    Yes, I got yelled at by my sister and this kid's mom for not being the "adult".

    Frank's for wings.  Texas Pete for everything else.  Hot sauce should add a kick to your food, and nothing more.

    Tiger Sauce is my favorite. It is very versatile and good on just about everything. It is really good on Pizza for some reason.


  • I believe hot sauce should be consistent with the origin of the food. I don't like Caribbean sauces with Mexican food or East Asian sauces with Indian. Think you have to keep it authentic, kinda like wine/beer pairing.

    I like the Marie Sharp's line. El Yucateco stuff if I want it hotter.

    Lingham's makes some good stuff as well.

    You mean like Tiger Sauce on pizza? =)

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I like franks along with a plethora of others. I wouldn't subject anyone to Tabasco for anything other than adding heat for heat sake. Tastes like crap! Horrible crap.

    The El Yucateco XXX is only around $3 near me. Nice flavour with some kick to it. When I feel like turning it up a few notches, I pull out the Blair's.

    Only homemade these days. Good crop of long red cayennes and Thai bird chilis so I'm good for most of the year.

    Cholula for a mild, fruity spice.  Great finishing hot sauce.  Frank's of course for wangs.  Tabasco and Crystal in the rotation routinely.  Tabasco for straight pepper.  Pete, I never pair it with bourbon brother!

    Another fan of Marie Sharp's habanero sauces.  And I have a soft spot for Tabasco sauces.  When first married some 30+ years ago I told SWMBO that the taste of whatever she made didn't matter as I could standardize it with enough Tabasco...Not one of my better moments  ;)
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.  
  • I have a whole fridge of hot sauces. That being said Secret Aardvark habanero is probably my favorite blend of heat and flavor. I have a bottle of Yellowbird habanero and I don't really like the flavor of it. It goes into buffalo chicken dip as the base sauce.

    Best on pizza is Pappy barrel aged pepper sauce. Works perfect with a sweeter pizza sauce. Very flavorful and not a super spicy sauce.

    Char Man Verde is hands down the best hot sauce I've tried for tacos/fajitas. El Yucateco green habanero is a close second.

    If you want some butt burners to add into your buffalo chicken dip, Blair's or CaJohn's sauces are the way to go.

    Cholula for all around use
    Frank's for buffalo wing flavor, bulk use in recipes
    Arizona Gunslinger Chipotle Habenero, El Yucateca, for Mexican.
    Pedro Lopez Hot Taco Sauce is standard on tacos, thanks to my mom and dad, growing up with it
    Walkerswood Jonkanoo for a unique, sweet, warm, tang
    I like to make a quick calabrian chille oil for Italian, or Mike's Hot Honey for pizzas
    Famous Dave's Wilbur's Revenge is nice on pork.  Can pick up some pineapple with the habanero.  Good heat and flavor. 

    Tabasco is garbage water IMO.

    I'm with Stephen, and matching sauces.

    I hate Tabasco, nasty stuff to me.  Cholula Original on any Mexican food, Franks on everything else that needs hot sauce.  That reminds me, almost tamale time at our house...man I love Christmas Eve tamales!

    Have lots of hot sauces.  For Asian foods, Sriracha is good.  For everything else, I prefer Crystal Hot Sauce.  It has the best flavor of all that I have tried.
