Bacon. In the style of Canada.

I tried my version of Canadian bacon. It was ready to go yesterday so it was my first snowy cook of the season.
I cured it with Tender Quick and dark brown sugar:

Rinsed & soaked for 30 minutes then dried:

Gave it a little Dizzy Dust and smoked with hickory & cherry chips until 140 degrees.

And finally a sample after a couple minutes in a frying pan:

It turned out really well. I plan on slicing it up & packaging it as part of a breakfast gift basket I give to some friends & family.
