Aguja Nortena (short rib) wrapped in marrow

So I went to get a picture of a "pork leg" with no success and ended buying some chicken breasts and a 2.5" aguja nortena steak(short rib I guess) and marrow.

Decided to do something different with the marrow.

Smoking the chicken breasts with apple chips and a little bit of hickory:

Hmmmmm, Two things I absolutely love.

So it went better than expected, at the middle-end I put skillet inside the egg and the meat on it. Wanted the skillet to get hot for the searing, must think in another way for getting hot next time:


After resting it for about 15 minuets and the searing it is ready for the tasting, also first time using the new knives and cutting board:


Ate it directly from the board:

Let the skillet be the drip pan on the ps. Plenty hot.
