  • I am tuned in on this! Never done a brisket before but I can't wait to try. I can't even find one where I live. 
    Maybe you're not looking in the right places, where about do you reside, sir?
    That's my problem. I'm kind of in the middle of nowhere. Sumpter, SC. I would probably have to go to Columbia or even Charleston to find one. Do you think they have them at Costco? That's about an hour and half for me but we do go over there once a month or so.

    @Marty_Huggins- given you are a Costco member, give them a call and see what they say.  Depending on where you are, Costco and packer briskets can be a crap-shoot.  But what's the worst they can say.  Local Costco around here have become quite reliable with packer inventory after a few years of inconsistent stock.

    Turned out pretty good. A hair over cooked perhaps but very good. The burnt ends had to be rationed.

    I don't know what about that makes you think it was overcooked. Overcooked would have been crumbling apart, that looks perfect. Nice job!

    Part of my problem is I really don't have a measuring stick. Never eaten a lot of brisket in my time. It was the best of the three I have done. Everyone liked it.

    @tikigriller -  Here's a true measuring stick... This past week I made the brisket pilgrimage to Austin, TX (I'm old and this was a bucket list event).  Thoroughly pigged out (meat coma every day).  The level of excellence was off the charts, across the board.  I now know the brisket holy grail to which I need to aspire.
    But absent all the above, if you, your family and guests enjoy then you are on the right track.   The name of the game is always looking to make the next cook better-with that you are well on your way.  FWIW-
