Ok, 3 racks of spare ribs and 3 racks of baby backs are on. I was trying to monitor middle grate temp with my Maverick, but I think it's too close to the meat because it's reading 203, and dome temp is reading 250  Could this be the problem or should I be worried. I'm using a small Dutch oven in the middle of the lump for smoke. I filled it with pecan chips. Could that be causing an issue? 

I'm following Meathead's last meal ribs recipe. Baby backs should finish an hour or so quicker than the spare ribs correct? Any advice would be greatly appreciated. Thanks.
