Turkey Breast

So... I picked up a couple of "Honeysuckle" turkey breasts....  around 8 pounds.

My plan is to try a brine mix I purchased at Cabelas.  It's called "Game Bird & Poultry Brine Mix"...

Figure I'd brine them for 24 hour then cook them indirect at 325 til I get a 165 internal temp....

What sayeth the forum of knowlege?
