Just a Pork Chop

Went by a Costco the other day and saw a deal I couldn't refuse. A giant pack of pork chops for under $15. 


Couldnt believe eve how thick they were. Didn't get the tape measure out, but some of the thickest boneless chops I have seen not specially cut. 



Brined then hen using the BGE maple brine. Found here.

Start up using a new method (to me), using an oil soaked paper towel. Worked amazingly. Will never buy a fire starter again. 



Setup up a raised/indirect with a CI on the first grid used for the indirect/ending sear. 



Rolling along nicely. Made a maple glaze to finish the chops. 



Finished with some garlic parmesean cauliflower rice. Everything turned out really well.
