Plate ribs (pics)

have had a tough time locating plate ribs, but finally found a butcher who carried them. Will definitely do again. Treated it pretty much like a brisket. Probed like butter at 195 so I declared victory.

If you have a restaurant Depot in your area, they almost always carry  them.  Yours looked great.

Not only brisket on a stick but you nailed a smoke ring as well.  Great cook and result.
Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

There is one in San Jose that is close to my work, however, I do not have the qualifications for membership.

I joined my local Restaurant Depot Friday. I do have a tax resale number so it was no issue(even got a second card for a buddy to use). My first trip there I bought a nice pair of three bone beef short ribs that were massive compared to what I can get locally at retail shops. With the Thanksgiving leftovers and some other stuff I had to cook before spoiling I dropped them in the chest freezer for now. But I will soon be playing with my first beef rib low and slow cook. I always did the small short ribs in a braiseing liquid.

I would really like to find these by next Sunday. My family is coming over and I really want to do a brisket but I just don't have time in my schedule to make that happen and these plate ribs would be the perfect solution.
