After drooling over all the awesome taco and seafood pics for the past week, I had to get involved! I love fish tacos but only if it's predatory fish like snapper, mahi, grouper, speckled trout etc... Not a fan of tilapia especially if the restaurant I'm ordering at suggests it but then tells me they caught it in the Gulf?? :o but that's a different rant. I had some Cobia on hand so away I went!

I fired up the egg and put the cast iron skillet on to warm up to temp. 

Set the egg to 425-450 direct and be sure to cover the skillet with some foil

I trimmed the fattier meat off, coated it in olive oil then went non purist and used some Everglades seasoning for blackening 

 

Cooked the fish about 4 minutes on each side, careful not to over cook and threw some corn tortillas on for a few seconds on each side.
Once off the egg shred the fish then grab a tortilla!
