How long before freezing meat?

approximately how long if you seal your meat from purchase, do you estimate it is okay refrigerated and not frozen before you should just freeze it?

3 days?  5 days?

  • I have duck breast in original cryo about 9 months old. Really need to do something  with them. 

    Some folks wet age in cryo for 6 to 8 weeks (beef).

    you are fine for a week easily. 

    It would still likely be safe in a month, but it would be aged. And most people are unfamiliar with aged meat and assume it is 'bad' just about when it is getting good
  • If it's in the original package, it more or less has to do with the sell by date. You have to figure how long the store left it out refrigerated as well. 

    I have had chicken go bad in 48 hours and steaks I have left for a week. But our house rule is 72 hours.
