Little Griddle Maiden Voyage - Fajitas & Bananas Foster

I asked and got the Little Griddle for last Christmas.  I finally used it last night to make chicken fajitas and they came out awesome.   I used the recipe from the LG website for steak and substituted chicken for the wife.  Marinated the chicken and veggies for about  4 hours.  We had some friends over who brought some toppings.  I seared the chicken on the griddle for about 6 to 8 minutes minutes then moved it to the grill and started cooking the veggies.  Pulled everything covered with foil and heated up some tortillas.  Have enough make leftovers tonight. 

I then did Bananas Foster in my CO skillet and that came out awesome too.  Just need to cut it in half for 4 people.

The one I have is for the large.  The one for the XL is harder to find and cost a lot more money.  I like it that t gives me room to grill.  @NPHuskerFL  I believe has one.  They make square ones for gas grills as well.

Thanks, I didn't see you posted till now. I got the cleaning kit and egg rings as well.   I mat the  one for the stove top next.  Our friends said they will bring the ingredients for doing food like at a Japanese Steak House and I will do the cooking.

I may try Baked Alaska and crab cakes on it.
