Love beef ribs. I do hot sauce rub, salt and pepper, no wrap, smoke until they probe like buttah (usually >200).

Brisket on a stick- ride til you get the feel as mentioned by @J-dubya. The cook can run longer than you likely will think it should.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

six hours is not unreasonable, depends on how fatty they are but. I think they usually improve with a longer cook.

I'm sure they will come out great. Speak to the butcher at the store to see if they will sell you uncut ribs for your next attempt. I think the uncut ones come out even better. Post some pictures.
