    Looks great.  I'm assuming from the crust these babies hit a CI pan.  Can you tell me more about how you created this goodness?

    Crab Cakes:
    (1) 16 oz can of colossal lump crab
    (2) TBSP Light Mayo
    (1) Egg
    (1/4) Cup Ritz Crackers
    (2) tsp Old Bay
    (2) TBSP finely minced chives
    S&P to taste

    Mince the chives, then lightly sauté in a pan until soft.
    While sauté is happening, drain and rinse crab meat. Place in mixing bowl.
    Sprinkle crushed Ritz crackers on top of crab.  
    Add Mayo.
    Remove lightly sautéd butter/chive mixture from heat.
    Scramble your egg, and then place over mixture.
    Once butter/chive mixture is cool enough to touch, add to crab mixture.

    Gently mix all ingredients, and press into 1/2" patties.  Cool in the refrigerator for 2 hours to let them set.

    Sauce:
    (1) Lemon juiced
    (1/2) Lemon zested
    (2) tsp minced garlic
    (1/2) Cup Whipping Cream (most call for buttermilk - I didn't have)
    (2) TBSP baby dill minced
    (1) TBSP parsley minced
    (2) Cups Mayo

    Combine all ingredients and let set in refrigerator for 2 hours to incorporate flavors.  


    *You can half the recipe for the Lemon-Dill sauce for 16 oz. of crab.  I made extra for cod filets later this week.

    Cook:
    (1/4) Vegetable Oil (I forgot the peanut when I was shopping).
    (2) Tsp butter for flavor

    Heat oil in a deep saute' pad (I did not use CI) until a small amount of water will pop.  
    Add crab cakes for 5 minutes one side - don't touch/flip.
    Flip crab cakes, and cook for 3-4 more minutes.
    Drain on paper towel/cooling rack.

    Serve with sauce on the side or covered.  Enjoy!

    These look great but I have a question.   When you say scramble the eggs, I think of them as cooked, when you say scramble.     Do you mean whip the eggs?

    Good call, my bad.  Beat it, it's still raw when you mix it together.  Used as a binder.
